April's Dessert of the Month

Here is the April edition of the dessert of the month gift that I gave my father-in-law.  Carrot cake with cream cheese frosting... and lots of pecans inside and out.  Mmmm...  I made two so I have some in my fridge.  I think I'm going to go have a piece of cold carrot cake.
